Homemade Spice Blends

Looking to make some homemade spice blends for the holidays. As of now we plan on doing a Cajun, Mexican, Mediterranean, and Italian. Anybody have specific recipes for these or any other ideas?

Someone on here had a thread on grinding peppers to make chilli seasoning mix. I grind peppers to make New Mexico Red Sauce....but that is just 90% New Mex Red Peppers.

I would do this if I had a nice grinder.

I did one once a while back using just ground store bought spices. It was decent. I kept it low salt, because at the time I don't think any of the major brands had a low/no sodium version, and I wanted something with less salt.

I make my own taco seasoning by blending spices. I eyeball it all though.

It's chili powder, cumin, garlic salt, onion powder, cracked black peppercorns, oregano, crushed red pepper, and salt to taste while cooking. I use more chili powder than cumin.

Shouldn't this be a personalized gift of your special/famous spice blend that everybody loves?? You're going to give spice blends you got off of a message board for presents?? Meh.

Cajun - SYM
Mexican - Adobo
Mediterranean - Cavender's
Italian - McCormick's Italian Seasoning
