If you believe the manufacturers, rehydrating affects the cells count.

I've always done it and would guess its' even more important in a beer with a pH of 3.25 where conditions are less than optimal for yeast growth.

Definitely rehydrate. It only takes 20 minutes and will give you better yeast health and viability. Since you are going to be pitching the yeast into an acidic environment, I would rehydrate the yeast and add it to a pint of starter wort for a few hours. Once krauzen forms, pitch those active yeast and you should get a fermentation going.

I've used this method in the past to fix a stuck fermentation, and it worked.

So, i have fermentation!

I did not pitch dry yeast. WHen i brewed the gose, i racked into a 5 gallon keg almost to the top and had about 3/4 gallon leftover that i put in a gallon jar and pitched gigayeast sweet flemish brett.

Well yesterday, still nothing from the wlp644. I now believe i had an old vial as there was no action from that yeast. So instead, i took my thief, and tried to take out enough wort in the 5 gallon carboy into a bowl. I then poured the 3/4 gallon of wort in the carboy. Unfortunately, i didn't take enough out of the carboy, so the carboy was filled literally to the neck, about 3 inches from the airlock stopper. I did this last night. I checked this morning, and i had fermentation going. I did use fermcaps so hopefully the krausen doesn't get too big or else i'll have a big mess to clean up. Just to be safe, ihave the carboy sitting on a towel, and another towel wrapped around the neck to soak up any blowoff.

Poured the first glass of my first sour blend the other day. It's a 50/40/10 mix of a year old golden sour, a peach kettle sour, and a brett IPA. It's pretty freakin good. I have two kegs of it. After drinking on this first keg, I think I'll take some inspiration from one of my favorites Le Terroir and dry-hop with Amarillo. I have a feeling this first keg will go quick as my fiance is crushing it.

I also had to dump 10 gallons the other day. I grew up some dregs from a couple bottle of Saison Dupont and threw it in a batch. Well, it didn't turn out well. Not sure if it was my brew day or the yeast, but it was not good. I suspect it was the yeast. The Dupont bottles were '15, and the starter was acting kind of weird, but I'm not discounting an error on my part.

How'd you determine your ratio's?

I have a 6-7 month old sour saison and last time i tasted it (about 3 months ago) it was pretty good. It may not need blending but i need to get a pipeline going.

After dealing with all this flooding bullshite, I am finally getting back to brewing. Going to brew a Firestone Union Jack clone on Monday. Anyone use that IPA book as a resource? If so anyone want to attempt to explain the convoluted way the Union Jack recipe is detailed out?

"At the start of the boil add Magnum, Warrior, and/or CTZ, calculating to 50 IBU at 5% alpha acids." What is the 5% AA about? All three of those hops are well above 5% AA. Thoughts?

I would have to guess that's an editing error, bc that makes no sense at all.

Got may scores back from the June BJCP exam. I passed, but missed a national rank by 2 points.

According to the notes I'm apparently too nice when scoring.

What's everybody been brewing? I haven't brewed since the day of the rain event/flood, but brewing a NE style IPA tonight for Brew at the Zoo. Also going to brew a gose for the same event either tomorrow evening or Friday.

I have a Union Jack clone fermenting. Just hit it with the first dry hop addition, should finish up fermentation by Friday so I can transfer into a secondary and dry hop again.

This one is just for the house though, too pricey to give away. Haven't brewed a 60 dollar beer in a long time. Props for you for brewing a NE IPA to give away.

I have a keg of Belgian Single left that I will probably use for BATZ. If I can manage some time I will get another one in. I know my dad hasn't brewed anything for the event yet (as he is living with me). So maybe I will tackle a beer on Friday and just split it off into two batches to make things easier to get two beers.

About to rack my gose into a keg on top of some cucumbers. Ph is at 3.25. I dry hopped it a couple days ago with 2 oz. of citra and am cold crashing right now.

Up next is 1 of 2 beers.

Rebrew of the hopnotoad - changing up the malt bill to lighten the color and add some haze. Also increasing my late hop amounts. 4.5 oz. in the whirlpool and 6 oz in the dry hop. Citra, Amarillo, and Columbus hops.

Or I will brew a 100% brett citra pale ale with Omega yeast labs All the Brett's yeast.

I already have the Omega yeast so i may go with brett pale ale. However, i really want to try out the NE style IPA (like you B) but brewing it with the new grain bill and a few new techniques after reading some articles a few weeks back.

The good thing about bulk hop purchases. When you have pounds of hops in the freezer, those sunk costs don't seem to matter as much when I only have to pay $25 for the grains and yeast. And the gose will only cost me $17-ish, so it evens out anyway.

Last weekend I brewed two things I haven't brewed in a long long time: an amber ale and a graff. I have fall themed party coming up, so I figured those would be good crowd pleasers. I just hope I can keep the bacteria and brett out of them until after the party.

We brewed for the first time in a while last weekend too. Brewed TropicAle on Friday night and a Gose on Sunday for BATZ. Need to knock out a Coconut Cream ale this week to finish things up.

Was good to get back into it and glad to have a pump again after Brewhardware.com replaced the first one that was acting up.

Kegged a watermelon gose last weekend and a strawberry kolsch this weekend. Brewed a pumpkin coffee ale this weekend that will be a beer for BATZ. Thinking about trying to brew a caramel apple gose for BRTZ also but not sold on the idea yet.

Just made my first bulk hop purchase. Got 6.5lbs of hops and saved about $150 compared to buying everything at the LHBS.
