Homebrewing: Formulating a Pale Ale Recipe

My next brew (sometime in February) will be an American Pale Ale. Last night i did some reading and have begun to formulate a pale ale recipe.

As of now (1/16/13) i've somewhat got a grain bill laid out. Let me know your thoughts. Keep in mind i may make several changes before brew day.

Grains
9 lbs. 2-row (84% of grain bill)
.75 lbs. caramel/crystal 20
.5 lbs. amber malt
.5 lbs Munich (other grains - 18%)
.25 lbs. cara-pils

(i think this is what i plugged into beersmith. I got the feeling i'm missing a grain addition.)

I'm sure that would make a pale ale but what about the hops?

I just did a pale ale with my first recipe so not sure how good it will be since it is still in the fermenter.

Grains
8.5 pounds of 2 row
1 pound Crystal 20
.5 pound of carapils
This grainbill gave me 1.051 OG with 75% efficiency.

Hops
.5 ounce Columbus at 60
.25 ounce of Citra at 15
.25 ounce of Simcoe at 15
.25 ounce Citra at 10
.25 ounce Simcoe at 10
.5 ounce Citra at 0
.5 ounce Simcoe at 0
1 ounce Citra Dryhop
1 ounce Simcoe Dryhop
This gave me 45 IBUs.

Used American Ale Wyeast for yeast.

Cara-pils for some head retention, and amber for a little color and flavor. I looked at DFH 60 minute IPA and they use amber in their recipe, and i am a fan of that brew.

May switch out the cara-pils for wheat, however.

Didn't get that far yet. I know i want some warrior and cascade, and probably some citra, but i need to do some more reading. I kind of read through the chapter on hops pretty quickly. It was getting late so i decided to stop at the malt. (book was Designing Great Beers)

I'll continually update this thread as i go along with my recipe formulation.

My only constructive criticism its that the OG looks a little high for an APA, but I don't know what kind of efficiency you get on your system. I don't recall seeing much amber malt used in some APA recipes I've seen, but I'm open to new ideas, though I might bring down the amount some.

Yeah. My only 3 all-grain brews, my efficiency has been 74, 78, and 84 (if i did my calculations correct). I think it brings my OG to 1.062, and like you said, it's a little high. I may drop it down about a lb or 2. I was thinking of adding more grain to account for my loss of efficiency. Maybe go down 1 lb. on the 2 row, and .5 lb. on the amber.

Again though, i want to make something a little different, thus the amber.

I was listening to a show about formulating an APA recipe this morning.

66% 2 row
24% Pilsner
5% Honey Malt
5% Flaked Barley

Something about like that.

With Chinook Cascade and Centennial hops.

It was basically just 2 row and crystal 20. It really doesn't have much flavor. Not too happy with it. The hops kind of overbalanced it and gave it purely a bitter taste with no malt backbone. So, i decided to stay away from the pilsener and add some amber. May up my specialty grains to 18-20% of grain bill.

I'm pretty sure they added it there for more malt flavor.

That's a lot of crystal for a pale ale. The majority of the recipes I see call for about a 1/2 pound per five gallons. I've never tried amber malt so I can't speak to it, but I do think its important to add a little malt complexity to your pale ale (I use Vienna).

Give it a try..

You're not going to hit it perfectly the first time so brew it and see what you like or don't like about it.

I have Brewing Classic Styles on the way and plan on using that book as my recipe guideline for a while until I figure out what I like and then start tweaking recipes.

I've been reading through Designing Great Beers. A whole bunch of information in that book. I don't think i'll need to move on from it for awhile. I did, however, buy 3 brew books the other day, taht should come in tomorrow. Radical Brewing, IPA: Brewing Techniques, Recipes, and the Evolution, and Lagunitas: The Story
