Could that be an issue considering everyone else suggests 1.25:1 ratio?

Historically yes, but with modern modified malts your mash thickness has almost no affect of efficiency.

you can check this link out for some really in depth mash experiments.

I see it mentions mash PH. I've ordered some 5.2 for next week's brews.

I had 30 pounds of grain in this last batch so I used .8 quarts per pound, it all seemed to mix together well and I don't think that was the problem.

I have an unopened tub of this stuff that I'll probably never use.

If anyone wants it, they are welcome to it.

I tried that stuff a few times and it only got my water down to about 5.8. YMMV.

I'm not sure about NOLA, but the PH of Baton Rouge water is really high (8.8 I think).

I found it was really difficult to drop the PH below 5.5 unless I was using a lot of dark/roasted malts.

since you didn't specify which weekend...

I just ordered the Simcoe Pale Ale kit plus some extra simcoe for dry hopping.
