Highway 90 Jambalaya (recipe)

Highway 90 Jambalaya
Rice
onions to taste
oil
green pepper to taste
flour and butter (for roux)
tomato sauce
salt and pepper to taste
miscellaneous meat (see directions)
1 spray can Caution Yellow paint
At dusk, drive down Highway 90 between Boutte and Avondale equipped with the can of spray paint. Spray a yellow circle around every dead animal on the highway.
In the morning, just before sunrise, drive slowly down the same section of highway and pick up all the dead animals that don't have yellow circles around them. (These are the super fresh ones!)
Remove fur, skin, scales, feathers or whatever, debone and dice. Fry off and add to the rest of the stuff.

One needs to be careful to fully remove the rear end glands of any skunks they might pick up from the tarmac. Carelessness in the preparation of roadkill skunk can give the Jambalaya an off taste that some find offensive.
