Healthy (lowfat) inventive ways to cook chicken

Anyone have any good, healthy, lowfat recipes to cook Chicken breasts (boneless, skinless) that kids will like? I am a typical Louisiana native who cooks way too bad and am looking to get myself and family on a healthy diet. Thanks for your help.

Flatten them out a little, coat them in flour, egg wash, and a season/bread crumb/parmesan cheese mix... bake them up and serve with spaghetti, salad or a squash/eggplant/onion with marinara mixture (something like moussaka.)

I cook 4 chicken breasts with a can of drained black beans & a small can of salsa - just bake it all together. It's easy & healthy!

Fajitas! Cut chicken into strips, use a little oil in the bottom of the pan and saute' with onions and bell peppers... if it starts to stick, add a little water, not more oil. (You could also grill the chicken, just make sure you season it up well.) Use wheat tortillas, lite sour cream and non-fat beans.

eta: Or chicken tacos... kids love tacos. McCormick makes a chicken taco season pack. I know these really aren't "inventive" ways to cook chicken, but they're relatively healthy and kid-friendly.

Rub with olive oil and season with Cavander's Greek Seasoning. Then pop them on the George Foreman grill until done

Baste them in the garlic soy or thai rib sauces from Zea and then grill. Did this a few nights ago and they were delicious. This is big coming from me because I despise boneless skinless chicken.

i've always crushed cereal(special K, nothing sweet), do your typical egg wash, crush the cereal in a plastic bag, and treat it just like shake and bake by shaking it in the plastic bag....
