Having some coworkers over for dinner soon - suggestions

Most of these guys are from Louisiana and we're in Texas right now.

What would be more appropriate? Louisiana food like a Gumbo or should I whip up something more Texas themed like a Chili or some Tex Mex?

I don't think it really matters either way as they'll be grateful. They just want to see the new house.

It's only going to be a handful of people. That's a lot of effort. I do everything from scratch and take my time with it.

Louisiana food. You can get Texas food anytime you want when you're in Texas.

Guess you have a point there. I'll have to step up my game. I'm used to cooking Louisiana food for native Texans and now I have to impress people that know what they're eating.

Well I make it how they make it in Texas. Real Chili.

Not the shitty ground beef and bean filled slop you coon asses throw together and call chili

But as far as things that are considered "Texas" food I'd have to agree with you.

Chili would work. I'd suggest adding some deadly bacteria (don't you eat it). This will create vacancies at your company and increase your upward mobility.

This. Plus, they probably miss home food.

Etouffee is one of the easiest things to make, Louisiana-wise, if you can get LA crawfish tails.

Especially with those guys being from La. Not much home cooking wise is specific to texas that isnt included in a La home cooks repertoire.

Again, bbq is probably the only exception.

No, I was going to give you Indian/Thai recommendations if you were in Houston.

Not real familiar with Corpus. My vote would be for a small BBQ joint that has smokehouse attached or authentic Mexican.
