Hatch chile Recipes/Usage?

I noticed this past week that Rouses was pushing hatch chiles at the front of their store so I picked some up. I can't say that I have actually cooked with them before. I know the easy way is to just put them on the grill but is there anything else? Any recommendations?

They're kinda overrated IMO. use them anyway you'd use a chile that has no heat.

HEB has a hatch pepper month where they put it in everything.
Tamales, enchiladas, salsa, guac, hatch pepper jack cheese, hatch tortilla soup, hatch chili burgers, etc...

Put them in skillet corn
Gazpacho
As someone said, add to about any dish in which you'd normally use a chile pepper, but know they aren't really hot in spice. They do have a nice chile flavor, though.
I've roasted a bunch and vac sealed them for the freezer for a quick sauce here and there.

Gazpacho

Roast them, peel them, use them in pimento cheese in lieu of pimento.

Some hatch have no heat but most have a heat similar to jalapeno. I usually break one open at the store and taste it. I roast and peel several pounds every year (and I taste each batch I roast and note the heat on a label) and freeze for use in.....
hatch green enchilada and burrito sauce (I have a recipe posted in the recipe thread).

Red Beans & rice, jambalaya
on burgers
grill cheese
scrambled eggs
New Mexico Green Sauce
1 tablespoon shortening or oil
1 cup chicken broth or veggie broth
1/2 cup chopped onion
1 teaspoon garlic powder
2 tablespoons flour
3/4 teaspoon salt to taste
1/4 to 1 cup chopped green chile (preferably roasted Hatch. Roasted Anaheims will work but you may want to add a jalapeno or 2 for the heat as anaheims are what I would call mild in heat).
1. Heat shortening in a medium-sized skillet on medium heat.
2. Sauté the chopped onion in shortening. Add flour and cook for 1 minute.
3.Add all remaining ingredients and simmer for 20 minutes.
If the sauce is too spicy you can add a teaspoon of canned tomato sauce and re taste. Keep adding tomato sauce in small increments until you get the heat down to where you like. I add about 2 tsp of tomato sauce always as I like the added acid hit.
Then you can follow my New Mexico Red Sauce recipe for making the stacked enchiladas. LINK
