You can go to a legit butcher like Scallans and buy a whole, half or quarter cow butchered to your liking. My brother in law does this twice a year. Problem is, i find the meat to be meh...

The kids who show livestock in 4-H competitions put out quality animals, often walking them regularly for exercise.

If a whole cow is too much for you, consider going in 50/50 with someone else.

that would depend on how big a cow you bought...

My parents did this a few times when I was a kid, so I'm not current......but I think approximately 500 lbs. I could be way off.

As a general rule, say you've got a cow that weighs 1200 lbs "on the hoof", you get about 50% of that in finished meat product.

I would think that there would be business for a butcher that could select the cow with the proper quality meat for his clients and cut to specs...

Call T'Boy in Mamou.

No, this is not a joke. T'Boy's meats in Mamou is one of the very few remaining slaughterhouses with a meat market out front. The stock is grazing in the back, chilling in the front. His microwave boudin is genius.
