gumbo in black iron pot

our kiwanis club has entered a local gumbo cooking contest. one member has offered to bring his large jambalaya cooking setup. i'm not so sure the cast iron is a good idea for gumbo. any thoughts? our gumbo will be chicken/sausage. thanks

knew about cast iron and tomatoes sauce. acid in the sauce pulls the iron taste out of the pot i think.

Never tried cast iron for gumbo but have made several kickass turkey neck stews in my cast iron dutch oven so I guess it should work fine. Your gumbo is going to taste like his jambalaya though...

mx that was my thinking, i use cast iron all the time but it is very pourous. guess you have to know your pot, but i also prefer stainless or aluminum for gumbo

I don't think I've ever cooked a gumbo not in one of my cast iron pots.
And I cook things with tomatos in them as well and I've never had a problem. I do sauce piquante and brown my tomato paste in them. Wives tale.
I'll scrub them clean with a Brillo pad too if need be.
