Thanks for all of the input. Gave it a shot and it was pretty good. Not entirely necessary but different.

Lots of folks use thyme in gumbo. Recipes by John Folse, Emeril, etc. call for a sprig of fresh or tiny amount of dried.

One of my complaints about restaurant gumbo is they often go so damned heavy on the dried/powdered thyme. Too much ruins it for me.

I add it to my bowl of gumbo, too, never in the pot.

I thought the health issues were with the root, not the leaves? (Too lazy to Google and read at the moment.)

Guy at worked cooked a big pot of chicken and sausage gumbo with okra and used about 3/4 of a jar of file....it turned into the consistency of jelly.
