Any ideas on what to do here?

I have a pound in the freezer that I'm looking to do something with. The only thing I can think of is lamb burgers on pita bread. I can mix up some Rosemary, balsamic vinegar and some other herbs. Maybe some feta cheese mixed in. Top with a yogurt or ranch sauce with Pita bread.

I'm open to some other good ideas. My wife doesn't like lamb as much as I do, so I'm trying to find an idea where the lamb is a piece of the dish and maybe not the main focus like a burger.

I've had a minced lamb meat curry before at this Indian buffet that was pretty good. That might be pretty difficult to cook but it's an idea.
