I do a paleo beef and veggie bowl. It's pretty damn good.
Just a head of brocolli cut into florets, chop up some cauliflower, steam that shite, and mix it in with some ground beef. I happen to love all those things, though.

For a quick meal I'll throw a pound of ground beef into mac and cheese. It's nothing exotic, but it gets the job done
My wife makes hamburger steaks using beef consume for the gravy that are really good.

I do a meat and pasta mix. The wife calls it hamburger helper, but she's a bitch
I brown the meat with onions and garlic, then season with salt, pepper, worchestershire, beef stock, corn starch, a touch of white wine (maybe red is better, but I don't want to overpower the flavor)and heavy cream. Mix with your choice of pasta and done. You can add some mushrooms if you'd like.
It's very stroganoffy, and it's a hit with the family.

Greek dishes like pastitio and moussaka are traditionally made with ground lamb, but beef works as well. I have a huge freezer stash of grass fed, local ground beef, so I'm always on the lookout for new & different.
An old-school bayou cajun dish of ground beef & carrots is in the rotation at my house...brown beef, onions, garlic, a little green pepper, cayenne, salt, add thickly sliced carrots (or baby whole carrots), a little water, cover & cook over low heat until carrots are tender. (You can do the same thing with eggplant.) In the same cajunish vein, try ground beef stuffed peppers (lighten the beef with either cooked rice or breadcrumbs). There's always rice dressing; just use 2X the usual amount of meat and it's almost a jambalaya-ish dish.
Ground beef is a good choice for stir-fry, especially with mushrooms, green peppers, and zucchini cut into smallish batons. Either make your own sauce, or use a bottled sauce.

Cabbage rolls are the bomb. A bit more work intensive, but you can turn it into a cabbage roll casserole instead. I cook the meat down with onions, garlic and tomato sauce, then mix with rice, cabbage and some cheese and seasonings. Throw it into casserole dish, then bake for about 30 minutes I believe. It's a recipe I found a while back, so I don't remember all the ingredients and times. I'll try and find it then post the link here. It's killer.

This isn't the exact recipe, but it's mostly the same. You get the idea from it and can adjust to your taste.

So good. Ground pork works great in this as well.

I just picked up a few packs of ground pork on sale and stuck them in the freezer. I may just take one out and give this a shot. Sounds killer. I'd add a little sage to it, since I think sage and pork are great together.
Which reminds me of the meatloaf I made last night. I mixed half pork and sirloin, then seasoned with fresh sage, rosemary and thyme and a shot of worchesterhire (along with the typical ML necessities like milk, water, breadcrumbs and egg). I put a little bit of brown sugar in it as well. The idea was to bring a breakfast sausage taste to the meatloaf. Mixed up a ketchup, brown sugar, mustard and worchestershire glaze for the top as well. It game out very good. Next time I am thinking of just doing a maple syrup glaze, but I'm afraid that would be too much.
ETA: Forgot to put in that I sautéed some onions and garlic in butter for the mixture as well

It would probably turn black in a hurry. We had meatloaf last night. Yours sounds killer.
