Got the Big Green Egg for Xmas

My wife bought me the Big Green Egg for Xmas. I am using it for the fifth time right now. Smoking some baby backs.

This thing rocks.

Anyone got any great tips, tricks, ideas?

You will never cook on anything else. Smoked a brisket for 18 hours and it only used 1/4 of the charcoal in the fire box. It is the best outdoor cooker ever made.

Tip from me ...

When cooking steaks at 1200, DO NOT FORGET to burp the egg. I'm drunk and just burned every bit of hair off my arms and lost a Lil bit of eye brow. It was ridiculous.

You can put this on your Egg and light the charcoal, it will keep the temp. at whatever you set it for. Ribs are done in about 5 hours @ 225. Pork Butts 12-15. These are for long low temp. cooking though.

Iv'e had my Guru for 5 years now and it takes the work out of smoking.

Thanks for the info. The links provided were very helpful. The ribs turned out great. I am headed to the store to get some 2" thick strips and give searing a try tonight.

I don't own a BGE but I would love you have one! What is the difference between the BGE and Kamodo Joe's? I grill chicken, burgers and steaks (your traditional stuff) but I would love to try slow smoking and other things. When would you really need to cook at 500+ degrees?

Kamado Joe's have a better quality top vent than any other competing ceramic grill. Grill Dome has stainless steel hardware. Primo has the oval shape. All ceramics cook great, but are expensive and heavy. I think these 3 brands are slightly better choices that the BGE.

500+ degrees is for steaks.

Smoking something for 18 hours??? How is this possible with the BGE. Meaning how do you add wood or charcoal?

I have only cooked on one once and have already mentioned before that I near incinerated some burgers with it. Put my "normal" amount of charcoal in it and apparently did not need that much.

How long after lighting though is it no longer able to melt glass? How long do you wait for it to get to a proper smoking temp?

As soon as your grill gets to desired temp, you close vents and it'll sustain that temp.
