Good Trout Recipes?

Looking for something to do with these specks I caught over the weekend besides just frying them?

Any recipes are appreciated.

I got a few:

Pan seared trout with lemon aoili:

four trout filets
Mayonaise
Lemon juice
Minced garlic
Salt and pepper
Olive Oil

Lightly batter trout with flour and pan fry in veg oil.
Whisk all other ingredients together and serve as a topping or condiment.

Almondine:

Four trout filets
Stick butter
almonds
milk eggs
flour
White wine vengar (1 tsp)
veg oil
salt and pepper

start by toasting almonds in a small skillet. remove and set aside.

Insert butter into skillet and brown. remove from heat. add vinegar ans set aside.

Salt and Pepper filets
Whisk milk and eggs together in a shallow dish
place filets in the wash
Dip in seasoned flour and pan fry in oil

top fish with toasted almonds and butter sauce and prepare for blow jobs.

Trout almandine, pan fried with a butter sauce and almond slivers toasted, trout mueniere, pan fried with a blackened butter sauce(bit of lemon juice in the mix).

Just salt and pepper, leave skin on and pan sear in a little oil and some fresh herbs skin side down. Add some fat, either oil and/or butter, and baste the top of the fish to finsh cooking. Finish with a little fresh lemon juice, and serve on top of fresh veg or pasta and call it a day.

bake it in some lemon juice, olive oil and italian. add a little sherry as well.

Lightly season fillets, use some lemon pepper seasoning if you have it, pass fish in italian bread crumbs, pan sear in butter, slice fresh creole tomatoes on filets, squeeze fresh lemon on top. yum
