You can only find it fresh during gator season most of the time. I've seen it frozen at Matherne's.

Yep. Matherne's has it in their ad this week--gator fillets for $9.99/ lb.

Look for jaw meat, its the most tender.

My brother in law hooks me up with the front legs from the 5' gators that they skin. We soak them in buttermilk over night then fry them the next day like chicken. They come out very good. Its like eating a leg quarter.
