Gas Oven Temp Drop

I have an old gas oven that heats up to target temperature but doesn't hold it. Eventually just drops down to the 200s. I can see the flame is on at the bottom the whole time. Any idea of what is going on?

Probably needs a new thermostat.

Thermostat and/or insulation. Does your kitchen heat up abnormally?

I wouldn't say it heats up abnormally
