Frog Leg Sauce Piquant Recipes

I'm doing a frog leg sauce piquant cook off and haven't cooked this dish too often. Any recommendations or recipes would be helpful. Going to do a bunch of practice runs to see how it comes out trying different ways.

I have only fried them. The key to that dish is going to be what kind of stock you use. I'm not sure what goes best with Kermit.

Emeril did a frog leg SP in his Real and Rustic book. LINK

I cooked that recipe once with frog legs, and it was pretty good. I've used the basic recipe many times since, but I tinker with it and just use chicken. Prefer the frog legs simply fried.

I have not eaten much home-cooked sauce piquant, but I've looked at recipes online, and (like with gumbo), folks are all over the place on their approaches.
