Fried Rice Help

Anyone have a great homemade fried rice recipe that they would like to share. I sort of want something like takeout but tastier.

Soy sauce.
Eggs
Some onions, white and green.
Olive oil
Put rice in fridge after you boil it... use garlic and whatever other seasonings you like.
There is another kind vinegar I use, can't remember name of it though.
Sesame oil.

I use this one that is a PF Chang's knockoff. Turns out pretty good.

I never use measurements in anything I cook. I just eyeball it.
Plus I paid attention everytime we ate hibachi.
Word of advice.... You can always add to it.

I've never considered making fried rice but love it so I may try. Just don't understand why you'd put rice in fridge. Also what do you mean, "after you boil it?" "Boil"? As in cook?

Supposedly cold rice is way to go when you make a fried rice... I don't know why... I don't think it really matters.
I put in in my flat pan when all trinity is sautéed, then mix everything up on med heat.

Boil rice, cook rice.. Same difference.

Btw, you know you're a coonass when you don't have measurements.

Drove me nuts when I started out cooking with friends when we'd go to a camp. Would come home and ask mom, "What you do after ____ ." She tell me she didn't have a "recipe" she could give me.
