I have this strange memory of some kind of steak smothered with some kind of sauce made with chunks of fish.. Like steak ponchatrain or seafood atchafalaya or something like that.

I would love to do something with gulf fish like trigger fish or grouper or red snapper... Anyone have something really unusual and yummy you can suggest?

I was over in North Carolina one time and they were making this dish called Eastern Carolina fish stew. It had big chunks of fish, potatoes, bacon, eggs and some other stuff in it. Every place I tried it the dish was similar in a way but different. You might look this over, Google some more recipes on this, and give it a try.

Don't over think it. If you want to do a surf and turf, cook some good steaks and serve with a shrimp skewer or crab cake on the side. No need to incorporate the seafood into the "steak sauce"
