Fish Tacos? Need Help!!

Got some fresh wahoo...looking to make some fish tacos tonight with it.
Looking for advice!! Tips,etc..

Keep it simple. Grill it and some homemade pico, lime and some of that crumbled Mexican cheese.
I like making a slaw with some grilled pineapple, maybe add a slice of avocado and squeeze of lime.
Hola Nola has good already made tortillas.

You can also go the asian route....grill the fish, make a ginger and lime mayo (aioli), dress with fresh mint, basil and cilantro.
Or, make a chipotle mayo aioli and dress with tomato and red cabbage.

I like to marinate in creole mustard, olive oil, crushed garlic and lemon juice for 30 min to an hour and throw it on a really hot grill or cast iron straight from the marinade. Tacos dressed with some thin sliced cabbage tossed with some of the reserved marinade before the fish is added, sour cream blended with a few canned chipotle peppers, cilantro and hot taco sauce.

Agree w simple. Seared fish, fresh pico, avocado, & lime on corn torts.

I season the fish with Tony's and cavenders and cook in a skillet. Hard to mess up.

You could use this slaw recipe I made up.
shredded cabbage. Red or white will work. I like a mixture
raw red onion sliced thin
diced cilantro
in a separate bowl mix
ground cumin
lime
salt
pepper
olive oil
Pour this over the slaw and mix together.
I'll sometimes top it with fresh mango or papaya

I got this recipe a few years ago in a thread I started about shrimp tacos. It is very good.

I would do some kind of corn puree as a sauce instead. That along with the pico would be a solid play.
Here's a recipe I've done before to go with pan-fried fish.
3 tablespoons butter
1 cup fresh corn kernels
1 lemon, juiced
Salt and pepper to taste
1 tsp sugar
1/4 cup chicken stock
2 tblsp sour cream
1/2 tsp cayenne
Heat butter over medium-high heat, then add the corn, lemon juice, salt and pepper, to taste, and the sugar, Stir together and allow to cook for 1 to 2 minutes. Add the chicken stock and allow it to come to a hard boil. Remove from heat and cool slightly. Add the corn mixture to a blender and puree until smooth. Transfer the puree to a medium-sized bowl and stir in the sour cream. (I like the consistency a little on the chunky side. Be meticulous with the blender and get it to your liking.)

I underestimated the amount of fish we had....Definitely will be eating some leftovers
Thanks everyone who helped out. It was simple.
My main goal was keeping the tacos "fresh"...It was great!!
