Favorite things to put on your smoker

Think Sunday its gonna be a smokefest at my house
chickens, may stuff a pork roast or maybe a garlic stuffed boston butt

1. Ribs
2. Butt
3. Chicken Thighs and Wings
4. Brisket (because mine kinda sucks)

I tend to cook butts most often though because they are cheap and feed parties.

Slipper Lobster Tails

Andouille, Fresh Sausage or Boudin that I've made

Not as easy on BGE as my vertical smoker but I've made it work.

My water smoker...turkeys and ducks.

My offset smoker, ribs, pork and beef, briskets, and pork butts.

do you spatchcock your birds, otis?

if so, do you do it for your turkey and duck as well?

Mullet, King Mackerel, Amberjack, Tuna, Yellowtail & Wahoo are great for fish dip. I know it sounds sacrilegious to use tuna or wahoo this way though.....it's really really good.

I've only done that with chickens, which I don't smoke often.

Never done it with ducks or turkeys. I only take my ducks to med-rare, so no need there. And my crappy old Brinkman cranks out the best smoked turkey known to mankind, trditional style, so no need to crack a back there either.
