Sometimes on smaller batches

Fried rice. We use what ever meat and veggies we have left over, throw in an egg and old rice, BOOM!

Thai coconut milk curries....you buy the curry paste (red, green, massaman, etc) in a jar, fry it a little bit in oil, add coconut milk, simmer a little, then add sugar/fish sauce/lime juice, plus chicken & veggies (green/red peppers, eggplant, water chestnuts, skinny green beans, chunks of potato, baby corn, mushrooms, whatever you want). Simmer until done. If you like crisp-tender veg, add them after the chicken has cooked for a few minutes.
Of course, you will need pot #2 to make some rice to go with.
Second favorite is a big pot of indian style lentils or chickpea masala (onion, garlic, ginger, spices, tomato)

one pot (pan)
brown chicken thighs in oil
remove and sautee onions, garlic
put the thighs back in and add literally anything...tomatoes, capers, herbs, mushrooms, olives, peppers, whatever you have in the fridge
cover & into the oven for 45 minutes

Sautee potatoes and sausage in a cast iron, crack a couple eggs on top, put cast iron in oven, add cheese, and take out after 20 minutes. Eggs should be just enough runny.
