Ever use leftover jambalaya to make interesting things? Like breakfast?

We cooked a big pot yesterday and have a ton left, so I grabbed about a lb of it, put in a bowl, and mixed up 3 eggs, a little milk, some herbs and spices and coated the jambalaya with them.

Frying it up in the pan now. Kind of like fried rice I guess.
It's pretty damn good.
Anyone do anything else fun with leftover jambalaya?

Yep. Makes a great omelette. Just like you're doing. Crisp the jambalaya in a pat of butter, pour in your whipped up eggs. Doing that this morning with leftovers from the downtown cookoff on Thursday.

Make a little patty out of the jamb. Fry it up til its browned and crispy. Put a fried egg over easy right on top. Got yourself a delicious coonass eggs benedict

Always my go to. Nothing better than jambalaya on a nightshift. 7pm for the jambalaya, 4am for the omelette before going home.

I add leftover jambalaya to canned chicken noodle soup along with chili sauce and this asian seseme garlic sauce. It turns it into an amazing Casian fusion soup that takes all of 2 minutes to make.

The other way is that I grill some more chicken and add some sweet and spicy salsa and make a Mexican chicken and rice that tastes pretty damn solid.

Jambalaya egg rolls with extra fresh green onions and a little dipping sauce are great.

Yes to making it into balls and coating w crumbs and deep frying. Cajun arancini (what the Italians call fried risotto balls)

I’ve made it plenty. Jambalaya cakes with a fried egg to top.

I'm not a fan of frozen rice. But it does freeze okay. Just freeze it in quart freezer bags and don't over stuff it, maybe 2-3 cups max.
