So a guy who works for me raises and sells chickens and eggs. A few months ago he started getting requests from some of his Asian customers for chicken eggs that had a devoloping embryo inside. Now he cannot get enough of them they are selling like crazy. They call them Balut eggs. Anyone ever heard of this?

The balut I see locally are duck eggs w/embryo. Hong Kong Market in Greta routinely has them for sale at the checkout registers, lined up in cartons. Other Asian focused food stores in SE LA offer them too.
