Easy and Quick One Pot Pasta Recipe

I may have posted this before, but if I did, well... folks are looking for quick and easy meals quite often.

I haven't made this, but some friends have and enjoyed it. Fast after work meal. You can google "one pot pasta" and find many variations. Look at "images". You can add chicken (rotisserie from the grocery or smoked from a bbq joint), sausage, mushrooms, different herbs, change up the flavors, the type of pasta etc... I would use fresh tomatoes rather than canned. I think cherry or grape tomatoes would work fine, particularly right now when you can find homegrown.

My mom used to cook the spaghetti noodles in the pot with the meat sauce. (Is spaghetti noodles redundant?) Looks like the same principle. Thanks for posting.

I've never cooked the noodles in the sauce, but I've cooked lasagna noodles sort of "in the sauce" because I just use the dry and put it right in the layers. It cooks in the oven since it's in the moisture and doesn't get mushy.
Anyway, the idea of this might work for folks looking for quick, but fresh work night meal options.

Basically a pastalaya with tomatoes.
