Do you dry brine your steaks?

Or other meats? I've taken to doing this, and it works well for me...

Almost exclusively. I read the Zuni cookbook many years ago and she advocated this and I have done it ever since. Do it for turkeys too for Thanksgiving and it works great and is much less hassle.

I've never brined beef but have brined chicken and pork, and I believe it did help. Steaks I now only salt immediately before searing.

I dry brine poultry, including the Thanksgiving turkey. Haven't done it for steaks.

Flavor enhancer and moisture retention (without the wet sponge characteristic of wet brining).
