Dirty Risotto Recipe

Last week I was in Orange Beach for work, and everyone recommended Cosmo's. Great food. There was a Dirty Risotto side dish that was pretty darn good. I offered to trade recipes with the chef, but they are held to a confidentiality contract. I checked online, but can't find a recipe that looks similar. Anyone try this place, and have an idea, recipe they recommend? Thanks.

Sounds like a rice dressing mix, served with risotto instead of rice.
If that's the case, it could be interesting with a small dice of Andouille, chicken and Boston butt..

If its "dirty" it includes liver/giblets.

I was taught that is what differentiates Dirty Rice from Rice Dressing.... But lots-o-folks have different opines on that.

Yep, me too. If it doesn't have liver/gizzards, it ain't "dirty" rice.

Lol, this subject can take a turn for the worse (considering the responses, lol), but it was creamy. Not a lot of meat/giblets, but still a good complimentary side dish to seafood.

I had "dirty" grits at Commander's which were delicious. I would imagine you could make up your own "dirty" base mix and mix that into the risotto.

every rice dressing I've ever eaten has had live/gizzard in it. I didn't even know the term dirty rice until I moved to NOLA
