Dinner last night - my plating still sucks, deal with it

Sous vide NY strips (medium rareish - wife is pregnant, so can't go too pink) finished in cast iron w/ thyme and garlic. Warm sprout salad with Balsamic reduction. Roasted Brussels sprouts with bacon, crispy garlic, and bay leaf.

There was also supposed to be spicy goat cheese stuffed tomatoes, but they kinda fell apart in the oven and my wife and I just ate them on the side. fricking delicious, just not pretty.

Your pan needed to be a little hotter and your meat drier for better sear. Anyways, looks good to me. good job.

The surface of the steak needs to be dry for a good sear to form a crust.
