Differentiation between pot roast and debris roast beef.

Last night I made some debris style roast beef poboys (I think) which came out pretty good. Upon cooking last night the recipe I used called for browning a chuck roast stuffed with garlic and simmering it in a Dutch oven with broth,carrots ,onion a couple bay leaves and S & P.

My question is, what is the difference between a debris style poboy and say a pot roast sandwich?

Debris is cooked longer and falls apart way more easily. You also generally shred it and add a lot more to it when it is simmering. I have done both and the debris is much more tender. A pot roast tends to keep its consistency more strongly.

Great recipe.

The difference is that pot roast generally included potato as well and the debris is from cutting the roast and making the gravy with the stuff that falls off.

You can use the exact same recipe to make a great pot roast by adding potatos and not cutting the roast up and making the gravy with debris.

Hahaha,sure was. I almost did a double take when I read carrots but it came out awesome.

it does not translate well in a crockpot, I thought it was a good idea at the time but the dutch oven is the way to go.

Even if you do all the steps prior to the simmer stage in a non-crock pot? I would have thought it would work as well. I use my Le Creuset for it never tried the crock pot.
