Different Hot Sauce for Different Foods

Any dishes that you use only a specific hot sauce for? For example:

Red Beans- Tabasco
Oysters- Crystal
Gumbo- Louisana
Eggs- Sriracha
Stir Fry- Sriracha

I prefer Tobasco in RB&R, Gumbo and Jambalaya because that is what I had when I started eating those dishes in college.

I use Valentina for a lot.

I use Tabasco Chipotle quite often as well, as my wife really likes it.

For tacos and beans, I generally use a few drops of the El Yucateco Kutbilik

I'm a hot sauce fanatic and collector. I have varying hot sauces from all over the place that I prefer on certain dishes.

At one point, my collection topped 75 bottles of various hot sauces. I've winnowed it down to a conservative 25 or so. They range from pure flavor hot sauces to the kind I use an eyedropper in for a full pot of gumbo.

I've come to prefer most of the fruity/spicy variations for my breakfasts; pepper sauces for lunch; and kick your arse sauces for dinner.

Haven't tried that one. Will put it on my next Amazon order. I'm still in the middle of my selection I got on the reddit hot sauce exchange.

It has amazing flavor. Use it sparingly. Here are some reviews:

"A very pleasant sauce. I added it copiously to some hot dogs and my entire head caught on fire ! Absolutely brilliant !"

I've got a bunch of different hot sauces. Which one I use really depends on the mood I'm in. Like beers, different hot sauces provide different flavors, and there's no one hot sauce that I will use exclusively.

And like beer, I make my own as well.

I used to keep a few different ones in the house, but I have switched to straight Cholula. It's fantastic.

Most everything else: Crystal

I do like using Panola when a thicker sauce is needed (like eating on a sausage/hot dog).

I like the green Tabasco sauce on raw oysters.

Louisiana, Crystal and the old time pepper vinegar on everything else.
