honestly i've only ever had a debri type loaf with ground venison, hearts, lungs, other organs. It was better than it sounds but I prefer a good breakfast sausage to a meat loaf.

lean sausage meat (pork) with sage, not fennel.
I do not recall this being added to the debri loaf I had as a kid. Just diced onion, chopped- ground pieces parts, egg, diced bell pepper, sage, garlic salt, worcestershire sauce, some crumbled cornbread....there was prolly more ingredients but for sure I remember these as a constant.

Yeah, I'd definately add some pork to it, but I bet it would be tasty

Well typically meatloaf is beef so I believe I would add some 80-20 ground beef instead of pork.
A couple eggs and some bread crumbs some sauteed onions, bellpepper and garlic maybe, season well and if you like pour a can of diced tomatos over the top while baking.

Made two last week. Mixed 2 lbs 80/20 ground beef with two pounds of deer. seasoned with onion, worcestershire, etc and topped with bacon. Baked on 350. It was excellent.
