Cucumber Salad -- The Cocktail

This is a cocktail I made with "spare parts" around the house last summer, and it has turned into a family favorite.

It's actually quite simple, and that is what makes it a fan favorite...

1. Rim the glass with salt & pepper
2. Muddle a couple slices of cucumber in a separate glass with a shot (or 2) of gin.
3. Add muddled cucumber and gin to rimmed glass
4. Add club soda
5. Garnish with cucumber slice (or not)
6. Fin!

Just thought I would share, if anyone felt in the mood for a nice summer drink while it's still hot out.

One of our go-to places in the city serves what they call a "garden gimlet" that is similar-ish to this, except they actually take the time to infuse the gin with celery.

Has a very fresh, light taste. Great summer-drink.

Infusing the Gin would bring this to another level.

I do like a Pimm's cup.

That process for me takes a bit of prep...

1. Peel and chop 1 medium sized cucumber.
2. Bring about 2 cups of water to a boil, with the chopped cucumber in it.
3. Let the cucumber almost get to a mash, and then strain the liquid into a pitcher.
4. Cover and refrigerate for a couple of hours.
5. Pack Tom Collins glass with ice
6. Fill half glass with Pimm's No 1. Quarter with the "cucumber water", and pour your favorite champagne for the last bit.
7. Garnish with an English cucumber.

Also, depending on who it is that is drinking it, I'll sometimes add some simple syrup (teaspoon for a little, and table spoon for a lot).

I really like the champagne as a substitute for the "lemonade."

I would puree cucumber in a processor or blender, volume of V-8 to garner the right taste, L&P to taste, club soda club soda for virgins or vodka for bloodys.
