Creole Chicken MD (Photos)

I made this for lunch today. It was an attempt to use things I had in freezer, refrigerator and pantry, while staying within the calorie limits of our current diet. In all of these respects, it was a tasty success.
Is it creole? Maybe.
Is it gumbo? I think not.
Does it include ingredients that some here do not care for? Sadly, yes.
To make my dish you will need:
- 3 boneless chicken thighs, lightly dusted in AP flour, seasoned with salt and pepper.
- 2 Tablespoons vegetable oil. You could cook two or three strips of bacon and use that oil if you like and add bacon chips to this dish.
- 1 medium onion, chopped
- 1/2 Red bell pepper, chopped
- 1 Can tomato, diced
- 1 1/2 cups fresh okra, 1/2-3/4 inch pieces
- 1 Chicken bullion cube (Telma Brand is what we use)
- 2 teaspoons Lawry's garlic salt
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2-3 teaspoons Slap Ya Mamma seasoning
1 cup dry measure basmati rice, cooked
Lightly coat 3 boneless chicken thighs in flour, season with a little salt and black pepper and cook in oil.
Mine were frozen, so eventually, I pulled them and cut them into manageable pieces.
Cooked them until they were done and added my peppers and onion.
Sautéed these a few minutes and added the okra.
Steam cooked the okra with a lid on the pan for maybe ten minutes to get the okra tender and set the texture, then added the can of tomatoes and seasoned the dish with salt, pepper, garlic salt and Slap Ya Mamma seasoning.
I like this dish with a tomato gravy and after ten minutes cooking with a cover, I added water to make my sauce along with the chicken bouillon cube and continued the cooking for another 15 minutes while I cooked my rice.
Serve with rice

Looks good. Thanks for sharing. I haven't made a creole tomato dish in a while and this has me wanting to. Works with just about any meat or shellfish.

I've seen people get revolted at the thought of adding both tomatoes and okra to certain dishes on here.

All in all, just words on paper. I already have my F&D mandatory three down votes (thank you Paul - not sure what I ever did to you), so I am already batting 1000. Actually it is early in this shuffleboard game. I could accumulate 87 by day's end.

To me, that's closer to gumbo than creole, because of the okra. But IWEI.
And MD, if you can put the list of ingredients, (like this)
in future picture recipe posts, I can put more of your recipes in the collection. Please leave out the hyphens, though.

I didn't downvote but it's not a very exciting dish, and I'm a big fan of your cooking and have used several of your recipes.
I'd have just made a roux and added about 5-6 cups of chicken stock and made it more gumbo/stew like.
Of course all that said, I would have to try a bowl.

LSU Zombie - The wife specifically requested no Roux (a high calorie component - probably the highest caloric component of gumbo) in my lunch creation because of caloric restrictions on our current diet, As I said in the intro, I never had any intent to use roux in this recipe.
This is all a part of my efforts to drop back to my weight the day I got out of Army Basic 47+- years ago. At that time I was a lean mean fighting machine. I still have everything inside of me except for the lean part and with a little luck I will hit lean before Thanksgiving - maybe Christmas. With roux in my diet, I won't make it - no way.

Today - A piece of fruit for breakfast. Bowl of creole Chicken for lunch. Protein shake for dinner. Maybe 1100 calories so far. I have not rung them up yet.
Goal is to drop a pound a week or week and a half. With exercise, I can do that. If I cut a leg off at the knee I could make my goal by morning.

You are taking the right approach. Try skipping breakfast (if all you are having is a little fruit) and go heavy on the coffee to blunt appetite. Also, when your body starts to fight back with hunger, up your protien and fiber, both of which really help with satiety.

The wife (MHNBPF) has a degree in therapeutic nutrition.
Unfortunately she is married to an old fart who never met a corndog he didn't like.
Trying real hard to develop new eating habits to see me through my last few years. As much as anything to prove to myself I can still do it.
Have lost 20 and maybe 15 to go to hit my target. My cardiologist (Artificial mitral valve) agrees with the plan, so we are slick at the moment.
Unfortunately she is married to an old fart who never met a corndog he didn't like.
Trying real hard to develop new eating habits to see me through my last few years. As much as anything to prove to myself I can still do it.

Good luck with your diet. Learning to live with some hunger pains can go a long way. Eventually you will feel full with much less intake than before.
