Cracker salad?

I don't know if y'all ever eat this, but I like it. My ex's grandmother had a home cooking style resturant here several years ago, and always had it on the buffet. It is great with fried chicken or fried fish. It may just be a GA thing.

Here is her recipe. I haven't made this since the summer, because I like it best when the tomatoes are fresh.

3 sleeves crushed saltines
6 eggs hardboiled and chopped fine
1/2 cup of sweet pickle relish
1 large onion chopped fine
12 tomatoes, crushed (or diced canned)
1 cup of mayonaise
1/4 cup sugar
Pepper to taste

Mix up well in a large bowl. Let sit overnight before serving.

I fry fish at work a couple of times a year, and I always make this the night before.

Looks like it too, but you should try it. I will bring a batch to the GA/LSU game next year. If y'all don't eat it, I don't care. I will!

Justin Wilson made something like this on one of his old shows. I think he called it potato salad without potatoes. It didn't make any sense to me then, either.

Can't say I've ever heard of it, but I have loved something called cornbread salad, so who knows?

I love cornbread salad. Like cracker pie too. Never had a cracker salad.
