I don't know if y'all ever eat this, but I like it. My ex's grandmother had a home cooking style resturant here several years ago, and always had it on the buffet. It is great with fried chicken or fried fish. It may just be a GA thing.
Here is her recipe. I haven't made this since the summer, because I like it best when the tomatoes are fresh.
3 sleeves crushed saltines 6 eggs hardboiled and chopped fine 1/2 cup of sweet pickle relish 1 large onion chopped fine 12 tomatoes, crushed (or diced canned) 1 cup of mayonaise 1/4 cup sugar Pepper to taste
Mix up well in a large bowl. Let sit overnight before serving.
I fry fish at work a couple of times a year, and I always make this the night before.
