Cooking Lima Beans - in game thread w/ pics (final pic added)

I haven't tried these in 30 years and I remember I didn't like them as a kid.

I decided to make some for the boys at work tonight. I usually make red or white beans.

Ingredients:
Ham steak cubed
12 oz chicken stock
1 lb baby Lima beans
1 lb frozen season mix (onion, pepper, etc). Just makes it easier
Tbsp veg oil
Seasoning (salt, pepper, garlic powder, parsley, cummin, paprika)

Add oil, seasoning, frozen onions to pot, sautee until onions are translucent.
Add cubed ham and sautéed for 5 more minutes or so.



Add the beans and chicken stock.
Add water to about three inches above beans.
Cover and cook on med to low heat

Looks good but I've never been a fan of the lima bean. Too many other beans to choose from.

I love lima beans. At the end I add a stick of butter depending on how many I've made, so more or less.

I'm disappoint son.

Meridian would have plated those bad boys, shown us the perfectly buttered slice of cornbread and then hit us with the fork view money shot.

These came out pretty damn good.

I love baby Limas and shrimp-an old Southern dish, but they don't do well together after day one so I season and sauté shrimp then toss in bowl of Limas. But man-that is good.
