Cooking gator for first timer

I'm planning on sauteing gator. Anyone have any tips on how long to cook for? Or what color cooked gator looks like?

Cooked sautéed gator will not appear too differently compared to chopped thighs and breasts of chicken meat would for a fact including blackened.


ETA for a group, take a look at Treedawgs sauce picante calculator, most serve it over rice.
