Cookbook suggestions to dive into

Have a decent collection already. And I really like reading through the informative ones that provide a lot more than just recipes. For example I have been working through John Folse's: The Encyclopedia of Cajun and Creole Cuisine, and America's Test Kitchen "Cooking School" and have thoroughly enjoyed both.
