Anybody gonna subscribe to CK's new magazine, "Milk Street Kitchen"? The first issue comes out in October. He's moved into a new test kitchen built for TV in Boston. The new TV show doesn't start until fall, 2017, but I'm sure I'll watch it, just like I watch ATK's 2 shows.

From Kimball:
quote:

What is Milk Street Kitchen?

It’s a place — 177 Milk Street — in downtown Boston. It’s also a cooking school, a kitchen, the set of our new TV show, and the place where we create the recipes that we call “The New Home Cooking.” For the last 25 years, I have promised the home cook that the recipes would work. Now I am promising that a different set of recipes, a new approach to cooking can elevate the quality of your cooking far beyond anything you thought was possible.

Am I the only person who doesn't like ATK? Something about that guy bugs me.

I watch ATK when they are cooking something of interest. Kimball doesn't bother me. I think I've gotten used to his quirky self.

I'll check out the magazine, but I find myself reading mags less and less. I turn to the online sources first.

Will definitely watch the TV show and check it out. Other than the ATK shows, there's not much else on air that teaches anything.

Love the show, my wife hates it. Like can't be in the same room when I'm watching it hate. But she's loved every recipe I've cooked of theirs, so there's that.

Kimball is a bit of a pretentious arse, but I still like the show. I think he likes stuff because he thinks people who are gourmets are supposed to be that way. Also, he's a typical New Englander. Blunt, opinionated and thinks like a critic - big ego, picky taste and thinks he owns the world.

Actually he's a New Yorker. He also is an old hippie and Deadhead as well as a big deer hunter.

I've been getting his Milk email for several months and his new venture will be much more ethnic.

I've never thought that. I've thought he was a bit of a nerd.

What I meant by that is that he sometimes goes with what the experts consider "gourmet" rather than simply going by what tastes good.

I don't see him that way. He is his own man on the taste tests, often disagreeing with the panel.

And ATK/CI don't hesitate to do things other than the traditional accepted way of chefs, especially if they see it as a time-saver for their home cook readers. They also sub for fancy ingredients that they think folks in the heartland can't find or afford.

That's actually one of my nitpicks on the CI approach. I know they are catering to their audience, but I'd like to see the full blown authentic approach too.

Sounds like his new venture may go more authentic/gourmet.

The dumbing down approach is one of my main issues w ATK. Easy is all good in certain circumstances, but when you change ingredients and techniques, you change a dish. This is most evident in the attempts to do various ethnic foods. Just stop already with the substitutions and shortcuts, then claiming something is Thai or Spanish. Nope, sorry, it's now American. And the silly obsession with one "best" way to (roast a chicken, etc), and dubious "innovations". Go read the head notes on ATKs gumbo recipe: it claims to make a roux in "half the time" because the oil is heated before the flour is added. Really? No duh.

Like all TV figures, Kimball has developed a character, but I have always liked his approach.

Just an FYI for those who didn't click through the OP's link, you can sign up to have the first issue of his magazine sent to you for free. Worth a shot.
