Does anybody have a good recipe for this? Cold weather is on the way and I love the stuff. Thanks in advance.

Love to use smoked chicken leftovers in soup with black beans, ro-tel, corn and jalapeños.

Disagree, the Costco version is very hit or miss. Tried it twice. One good, one really bad.

I don't have a recipe but I can wing a pretty good one
Saute a white onion, 1 green bell pepper, 1 poblano pepper, and some garlic
Add 1 chopped tomato and some chicken stock
At this point I put in my spice blend, I use a 2:1 ratio of chili powder to cumin powder
Add in roasted corn and black beans and then the shredded chicken. Let simmer so the flavors can develop
Garnish with avocado, tortilla chips, and queso fresco (you can use a different cheese if you like)

It's hard to mess up a tortilla soup.
A few months back I just dumped some broth, a whole bone in chicken cut up, cilantro, black beans, corn, can of rotel, can of tomato paste, onions, peppers, cumin, chili powder, garlic, salt and pepper
Simmered for 3-4 hours and shredded the chicken. It was amazing

i like to get a chicken for the store and eat it all week. Then make a stock out of the bones.
1 large onion
1 bell pepper i use orange for color
hot peppers to your taste I like Serrano/jalapenos
can of diced tomatoes
1.5 lbs of chicken thighs. \
lots of garlic
black pepper
cumin
Cook the chicken however your like. I roast them.In a slow cooker with some of the stock would work too
chopped and cook down the veggies
add tomatoes
add stock
simmer for awhile
shred chicken
add fixings to a bowl. enjoy
as others have said it is pretty flexible. Add beans or corn adjust spices and pepper. Its a very easy soup to get right.

It's really the perfect soup. We like to make a bunch on Sunday's when it's cold and eat on it throughout the week. We will pair it with tacos or enchiladas or really anything. Put some cheese and sour cream on top with some chips and guacamole. Get outta here
