Chicken Salad Recipes

Looking to try a good chicken salad recipe. I really miss Chops in Broussard's jalapeño chicken salad so I've thought about trying to recreate that somehow, but anyone else have any really good recipes they'd like to share?

I know all the Calvin's hype. Saw this recipe

Might be worth a try, but I'd probably tinker with it some for more spice

I am over Calvin's, the price is ridiculous. Now I prefer Costco's, I like the pieces of celery and the chunks of chicken, about half the price of Calvin's.

I love Calvin's and for chicken salad on sandwiches or with fritos or on crackers, that's the one I want or I make something similar in texture. For an entree chicken salad, I make the Neiman Marcus/Helen Corbitt chicken salad.

Don't have a recipe for ya. I just go to Rouse's and buy theirs. Its great.

My family always used cream cheese instead of mayo growing up. Makes a thicker, creamier spread- the rest was salt/pepper, pickles, squirt of mustard (I put a little more now) and eggs. It's still my most favorite recipe. I will add a little mayo and sometimes celery for a little more crunch- cream cheese makes all the difference though.

I debone 1/2 a rotisserie chicken and dice it, 6 boiled eggs (seperate the whites and yolk), 1 cup mayo, brown mustard, yellow mustard, celery salt, black pepper, sometimes a little dill relish.

Into a large mixing bowl a put my mayo, salt and pepper. Whip the lumps out the mayo, add my egg yolks and mustard and whip that till smooth. Add the chicken, diced egg whites and if you want a little dill relish. Serve that over some saltines or on a slice of white bread.



ETA; Thats also how I do Tuna Salad and Ham Salad and Potato Salad and Egg Salad. I keep it basic, some people add apples and celery.

I find rotisserie chicken to be too dry a lot of the time to make a really smooth chicken salad like Calvin's has. Rotisserie is good for chunky chicken salad, though. I like to put chicken breasts in a pressure cooker and then shred them with a hand mixer or kitchenaid mixer. The chicken is completely shredded and allows for a really smooth chicken salad.

I am NOT a chicken salad fan. But that Smoked Chicken Salad from Oak Point in Watson made me a believer. I assume it would also be at the Central store.
