I think you need at a minimum 16 oz of liquid Zatarain for that size pot and at least a 1/2 c of cayenne. That's where I would start and tweak it from there.

I boiled 3 sacks last night. For 20 peeps.

1 1/2 bags Chackbay
1 8oz bottle liquid
1 1/2 boxes salt


They were great, no complaints other than a chic from Washington.

Do you feel it needed cayenne? What did you do for the second and third batch?

I added some cayenne to mine but it's not totally necessary. In my opinion it complimented the Chinese red pepper that the Chackbay uses. And I wanted a little extra heat. My lower I-10 wife likes a little extra cayenne bite in her crawfish boil. I did my last batch like Ched but I added 4 more oz of liquid Zatarain. I thought they were very good.

Tried Chackbay for 5 lbs of shrimp tonight. It ain't bad at all, but needed more salt like everyone has said. I'm a Zatarains dude and will probably go back to my usual next time.

I boiled 2 sacks today with Chackbay. First sack I added 2 bags seasoning, almost 2 boxes of salt and 3 cups of Zats liquid to a 100 qt pot. They tasted great but I felt they were a little underseasoned. Some folks were raving that they had good spice without too much salt. I would've preferred more salt. For the second batch, I added another bag of seasoning, half box of salt and another 2 cups of liquid. They were awesome! Great spice and great flavor. Anyways I'm going to keep using it as long as I can find it locally.

ETA The first sack had significantly larger crawfish than the second so that might have something to do with it.

Chic was from Washington State.... too spicy. Momma Chedballz, all of her family and my mom ate 105 pounds. 15 people total. So 15 out 16 coonasses liked them, I'm fine with those numbers.

I had 2 pots. First pot I boiled my vegetables, took them out and boiled my crawfish.

2nd pot I boiled 2 batches of crawfish. 2nd batch I added 1/2 a box of salt and 8oz of liquid.

I tried Chackbay tonight for the 1st time for a sack of crawfish, not bad but definitely not impressed. I used 1 1/2 bags of seasoning, 24oz of Zatarain's liquid boil, 1/2 container of Cayenne along with lemons, onions, and garlic (80qt pit). The only thing I did different was I usually use 1 container of Zatarain's powder and everything else the same. Going back to my normal.

Tried it last night.

Used a bag and a half for 34 lbs. and one container of salt.
It's a good base flav. I didn't add cayenne to this sack. I will for the next one.

This stuff's good.
