Cast Iron Skillet easy meals

What is your go to (fewest pots possible) cast iron skillet meal?

I know reverse sear filet is going to be up there and it's my current number 1...but I'm curious to see what the FDB does with one of these pots.

I do everything in them...EVERYTHING!!!!!

A fun one is carmelizing onions, bell pepper, zuchini, and squash with honey and tony's in a little olive oil. Just cooking it down more and more until it renders a sticky sweet, spicy side dish of deliciousness

I've been doing crispy artichoke hearts in mine that have turned out really well lately. Toss them in olive oil, lemon juice, salt, pepper, and put in the oven at 400 until they start to crisp up, then take them out and finish with a drizzle of balsamic glaze.

I love cooking cubed red potatoes with bacon grease with a squeeze of lemon and fresh pepper and rosemary. So crispy and tender

Never forget the Spam sandwich too. Slice it thick, and cook until crispy edges, Caramelize Onions after coking the spam and serve on a nice bun with yellow mustard.

Mostly eggs and grilled cheese sandwiches. Bacon. Blackened catfish. I made cast iron skillet mac & cheese once and it came out really good. (I don't own a proper baking dish/casserole.) I just rubbed it with a stick of butter before pouring the mac & cheese (& bacon) mixture in and it worked like a charm with easy cleanup. I'll do that again.

Pork Shops- heat the skillet in 400 degree oven. Take out and sear pork chops for 3 minutes on one side over fire. Flip and put them back in the oven for 6-10 minutes until done. Juiciest porkchops.

Love doing brussel sprouts in the cast iron as well.

not a full meal but my baked beans recipe in the cast iron skillet finished off in oven are killer

I used to do some deal involving rice, cream of mushroom and two thigh quarters in the oven. Been so long i have no idea what all was involved. I miss that.
