I did a lot of work in Carthage for Chevron back in 2012.
I really can't remember any decent restaurants in that city.

I did some work up near Carthage in 2009, the Jalapeño Tree was the local staple. It was decent then, but no telling now.

Another vote for La Unica. Although the La Unica Express restaurant is really good, go for the whole experience at the larger La Unica restaurant farther north.

Jalapeño Tree is all over east Texas. Not a bad little regional chain.

Coming back from San Antonio two weeks ago and avoiding Harvey floods. We stopped off the main highway in Lufkin at a Mexican joint on the left. Forgot the name. But it's an old Dairy Queen like building. It was nasty as frick inside, but the food was jam up! Their house salsa was the best I ever had!
