can someone suggest a gourmet irish recipe?

I can't, but Irish food has undergone a huge transformation in the last fifteen years or so. Some of the most creative chefs in Europe are Irish and the food there is excellent.

A couple of things come to mind...
1. Dublin Lawyer - Lobster poached in butter, add whiskey and cream. Recipes:
Food Network / Rachael Ray
Some women's site - but recipe is much more detailed

If I were winging it...
2. Steak au poivre, but use whiskey to deglaze, and serve with roasted potatoes and fried leeks.

3. Or, shepherd's pie...but as a croquette? I'd try ground beef or lamb and onions, braised in Guinness, and then folded into mashed potatoes. Roll, bread, fry, and make an Irish butter beurre blanc.

4. Hot Pocket, but use clover for garnish
