Camellia Pink Beans My Way!

The other day I picked up a package of Camellia brand Pink Beans and decided today was a good day to cook them. Now the package says to cook them one way but I'm trying my way with a bit of a Cajun twist. I soaked them just like I would red or white beans overnight.
Got the seasonings(onions, celery, garlic, diced Cherry bomb peppers from the garden and fresh bay leaves)along with some diced tasso and Wayne Jacobs Andouille.
Beans added and time to simmer till done!

Are you going to give us a fork shot?? MD would've waited until they were done and he had finished eating before posting.

Ooh, I like that...only thing I'd add would be some chopped green onions right before serving.

Got that covered. It was raining when I went out back but I get some fresh from the garden along with some fresh parsley.

I'm actually making RB&R tonight. I don't think I've ever tried cooking pink beans that way.
Do you find they cook quicker? Hold seasing better then kidneys?

The Pink Beans are coming along really nice. Smells fantastic in here!!!
I'll let 'em simmer a lil longer to thicken up a bit.

Those looks NICE. I've never made Camellia's pink beans.

Pink Beans were done!
I made a little salad of fresh Mazzarella, thin slices of Vidalia onion, a fresh cucumber and a small creole tomato drizzled with a creamy Italian dressing.
Added some warmed buttered French bread slices and it was a delicious meal!
Y'all should give the Pink Bean a try. We liked them pretty good here. They are a hearty bean that has a slight bit firmer texture than red kidney beans.

I like them but I really like the lady cream pea. I planted some but don't know when to pick them.
