Buying Shrimp and Freezing them

If i were to buy some shrimp from a family member, say 35-50 lbs, and freeze it, would they still be good if i wanted to boil them in a month or 2?

What about getting some smaller brown shrimp for gumbo's, etc... Could i freeze head on? Was looking to make a stock out of the heads.

Or do the heads funk up the shrimp when frozen?

what about types of shrimp.

Wife's cousin has white 16/20 and brown 26/30.

GOing to use white for a shrimp boil, but also want some shrimp for stews/gumbos, and was going to go with browns, if the whites were too big.

16/20s are a little big for gumbo, so I'd use those to boil and or fry.

I headless my shrimp. Put them in a plastic Ziploc container, cover them with water and freeze them. I've eaten shrimp frozen for over a year with no noticeable taste or texture difference. Shrimp in their shell freeze and keep very well.

We just bought a bunch of 10/15. Averaged 12. Pulled the heads and double bagged the tails (in water) in ziplocks. Made stock with the heads and froze it in ziplocks. Both will last for months.


We cooked several batches of heads covered in water in the pressure cooker for an hour. Strained the liquid and reduced by half by boiling on the stove prior to freezing. This made a very rich stock.

I freeze them with the heads on in water quite often. I use containers for those and I top the water with plastic film and push out the air pockets. I just used some from over a year ago that I found in the back of the freezer, for bbq shrimp. They were fine.

ETA: If freezing as many as you will have for gumbo, I'd freeze the heads separately if you're not going to make the stock right away, but I'd go ahead and make the stock and reduce it so it doesn't take up a lot of space. I don't find that the stock keeps the same flavor as long as the shrimp do when frozen in water, but I'd freeze the stock and then vac seal the stock for better results.

Is nearly perfect size for 95% of the dishes your going to prepare.

No the heads should be fine if you freeze them. Ideally it is better to make the stock when fresh but I've frozen the heads separately and made a stock later on and it worked out well also.
