Random side note: the lady butcher at Verdun's was on an episode of Who Wants to Be a Millionaire.

so after 2 pages of discussion, who can be called in the BR area to get a 1/2 or 1/4 cow?
Use this site:

Here's a listing from the site:
Hollywood Livestock is a sustainable multi-species operation in Zachary, LA. All of the meats provided by Hollywood Livestock are from animals that are born, pastured, raised, processed, and packaged in Louisiana.
Our goals are to improve and repair our soils using careful practices. Under our care none of our meat producing animals have been injected with or administered any hormones or antibiotics. Our beef cattle are strictly raised on forages in the pasture and are never fed grain or animal byproducts. Our pork is only heritage breeds and pasture-raised from birth, they are also fed a supplemental grain feed ration. These animals are raised in a pastured environment that is as close to natural as possible. Also, we believe in handling all animals in a manner that is humane and appropriate for human consumption.
We are taking deposits for our weekly pastured eggs list. Sheep, Turkeys, Poultry, and ducks are in the future!
To learn more about our beef and pork CSA and to see our prices, visit our website.
We will do deliveries to certain areas in Baton Rouge.

Not all slaughterhouses are created equal, either in terms of animal welfare or in their packaging quality.
Tell me about it. My father in law offered to buy us a quarter 4 years ago. I had never bought straight from a slaughterhouse and had no idea what I was doing. I found a place in Orange, TX that sold quarters, half, and whole to the public and placed an order. The meat was terrible and we ended up throwing almost all of it away. I mean it was so bad I didn't even want to feed any of it to my dog.
So if anyone can recommend a place around Lake Charles I would be very appreciative.

So this is where I feel compelled to chime in: simply buying in bulk (1/2, 1/4, or whatever) doesn't mean you're getting locally raised beef, or grass-fed, or humanely treated, or non-feedlot beef. To ensure any of those things, you've got to buy a share in the LIVE animal. Otherwise, you're getting the same quality as chain supermarkets, just through a different vendor.
Here's a list from the LA department of agriculture showing all of the inspected meat & poultry processors. It's a good place to start if you're looking for non-industrial meat: LINK
