Butternut Squash help...

Is there an easy way to peel butternut squash? I love it roasted but to peel and cube it is a nightmare!

I cut off the top and bottom portion to where its flat on both ends. I then use my knife and cut off as much of the the skin as i can without losing too much of the squash. Finish by going around it with a vegetable peeler, remove seeds, and then dice into cubes. Should only take a couple of minutes.

Couple of options:

Get a high quality vegetable peeler. One that is extremely sharp and constructed to dig into that kind of skin. Cut off the bottom part with the seeds and discard. Place tube flat on surface and peel away.

Buy a larger butternut squash than you really need. Get a really sharp knife that has some weight to it. Cut off bottom part and discard. Use knife to cut off peel and don't worry about how much flesh you take with it. I typically cut into four sections when I do this for easier cutting.

Or you can go ahead a bake it with a little liquid. Don't bake it until it's mushy for smashing, but just enough so that the skin will peel off and the flesh can be cubed. I don't recommend this method because if it overcooks, it's not going to be cubed and even if it's cooked just right, the skin may not peel away easily.

I usually cut off the ends and then cut it in half. If I've hit the seedy part, I just scrape that and then go around with a knife to remove the skin. Then, I complete scraping out the seeds with a grapefruit spoon. It only takes a few minutes. I spend more time cutting the peelings off and orange and then cutting sections.

It really isn't that much trouble. Definitely more trouble than most veggies, but I can peel, de-seed, and cube it in a few min. It makes a ton, so it's worth it.

I use a serrated peeler and it takes the skin off pretty easily. It may take two passes to fully remove that tough layer, but it is quick.

I read recently that many folks get contact dermatitis from handling butternut squash. Their skin reddens, blisters, and/or tightens, then dead skin sloughs off.

It does not do it to me, but you might use gloves if you are the sensitive skin type.

I don't recall having that issue, but since it's been brought up here, I'll wear gloves from now on. I keep a big box of disposable medical gloves around to fool with meats and peppers. I have getting meat under my fingernails.

I just read about a microwave method. Has anybody tried nuking it before peeling?

I haven't. Does it cook the butternut squash at all? I wouldn't want it cooked in the microwave if I was going to roast it, I don't think.

Try halving them like I suggested. It's easier to cut the skin off short pieces than the tall piece. You have more control.

Happened to me. Skin on my fingers reddened and got tight, but it went away in short time.

Lots of steps, but if it softens the skin and doesn't cook the meat, I'm sure it would work well.

Got a set of these from Williams Sonoma a few years back. The green one works like a charm on butternut squash.
