Boudin Stuffed Chicken

Got some boudin at Billy's in Scott the other day. They're my favorite. Anyway I got married on Saturday and was able to make our first home cooked meal tonight.

Took some chicken breasts and butterflied them and pounded them out. Stuffed the boudin in and browned on on cast iron. Finished in the oven. Served them over some roasted garlic parmesan mashed potatoes with a chive oil and a chili oil. Turned out great.

Boudin is sort of like bacon. Makes a lot of things taste better.

Pretty simple. Blanched the chives and dried them, then I food processed them in a 50/50 olive oil/canola oil blend. Then just strained through sieve. The chili oil is just siracha cut with the blended oil.

Yours does too. I was just checking out the thread. That pecan pepper jelly looks amazing. I'm gonna be on the lookout for it.

Thanks, im sure any independent grocer can carry it but my wife keeps us stocked up from the praline shop itself..... Good woman

Had this in an entree at City Grocery in Oxford a few years ago, was phenomenal...I'm sure that one was just as good...
